I would think a digital oven/meat thermometer with a long enough lead (that usually) has a small braided lead long enough to match the length of the dipstick. Any such thermo I've seen/used are digital too.
There may be a discrepancy between the probes and the temperatures measured for the dash and the dipstick area. But, considering one's ability to accurately determine the reading on the analog (dash) meter, my guess would be the two should be/compare reasonably close (especially if the engine is/has been running long enough to be fully warmed up). YMMV!
