I have stock Z06 18/19" wheels. The fronts are 40mm offset but the rotor offset will make that work. I'll show a before and after in terms of fender fit and clearance.

Some perspective for sizing
 
The Z calipers needed a bit of modding in order for the adapters to fit. No biggie.

Also a couple of pics showing the size of the brakes relative to the fender opening. These things are pretty big.

Question?

Will I need to bleed ALL the brakes or just the fronts?

Get some speed bleeders .It only takes a second to bleed them and a good idea to keep the fluid fresh anyway.
Those Calipers are huge! Nice!

Interestingly, each side has its own bleeder.

Looks like I need to "shim" the caliper in order to center the rotor in the caliper.
Haven't checked passenger side yet.

Here's a pic of the difference in offset for the Brembo and Z06 rotors. Pretty significant which should make the Z06 wheel tuck in nicely. You can also note the difference in thickness.

I would definatley bleed the entire system. Start with he right rear, left rear, right front, left front. ATE fluid is not a bad choice. It is inexpensive works well. I have used it in my race car for years. I would suggest the gold color rather than the blue. It is easier to tell if it is dirty with the gold. Hope you like the brakes. Congrats!

next you will want the 4 piston Z06 brakes for the rear
