Looking at the one that came out it’s apparent that it’s not the at old. I say that because someone drilled a 1/8th hole, per Jerry’s writeup, in the top plate, indicating a relatively recent replacement. I may just check it for proper opening and put it back in.

Do not use the two on the right and there is no need for the 1/8 inch hole in the flange. If you test the thermostat on the left it should open a bit before 180 deg F and be fully open at bit over 180 deg F.
I would just use the Stant 14068 on the left if it opens at around 180 deg F as the 1/8 inch hole will not have much effect on function of the thermostat and that thermostat looks almost new.
