My preference is 2 pumps for the simple reason thats the way it was designed. The single pump conversion is simply an expedient to solve the issue of the pump/sender assembly becoming very difficult to find.
Standard DOT 3 brake fluid for the clutch and standard GM spec 9985010 power steering fluid are just fine. Here in the US power steering fluid is largely sold in a generic manner. If you turn the bottle over it will list the various mfg's and specs it meets.
